This post is a bit delayed, but I couldn't do Republic justice without posting my phenomenal pre-opening experience of course. Republic is the ever talented Kate Williams new restaurant in the historic G.A.R, building in downtown Detroit. G.A.R. stands for the Grand Army of the Republic and was originally constructed in 1897 at Grand River & Cass for meetings of the Grand Army of the Republic. The Grand Army of the republic was an organization of Union veterans post Civil War based on three objectives: fraternity, charity, and loyalty. Recently, Mindfield purchased the building to occupy the top two floors of this historic landmark and the bottom floor for restaurant space - enter republic. I was a lucky one that was able to get a sneak peak into this beautiful space during the soft opening phase and it did not disappoint.
The restaurant has a beautiful hand painted murals and is very warm and rustic, but elegant at the same time. The white marble bar accents the decor perfectly as do the perfectly unperfect frames and unique wall hangings/vintage mirrors. With Paul Fradenek as the bar manager, you are sure to get some very simple, yet complex flavors, and on over-all well balanced cocktail no matter what your preference, which I swoon over.
Going to the food, Kate Williams and her right hand souz chef of amazing proportions Sarah Welch, both dazzled Dine Drink Detroit with their food preview for Republic and are now off and running with this venture. I have to say I pretty much tried everything on the menu and it came out of the kitchen cooked to absolute perfection. The bone marrow fritters, duck confit, fish fritters, steak tartare, trout (full trout flaky and moist), steak (which melts in your mouth), and much more.
They take reservations now on Opentable so you can buzz on over and check it out for yourself. There have already been some celeb sightings. Get in hot while you can.
Next to open is the sister restaurant Parks & Rec next door - I peeked in but that's hush hush for a while until it is unveiled...stay tuned for more info...
